O ur winery, which was constructed in 2003 and is surrounded by vines and is only 500 meters from the old center of Elciego, is an efficient building which comprises the zones for wine making, bottling and cellar for barrels and bottling of wine. This is a small but functional winery which allows us to control our craft.
O ur barrel cellar has a capacity for the 200 barrels needed to craft our Crianza wine.
W hen our grapes reach an optimal level of maturation, they are hand picked in the first selection of the vines.
After the stems are removed in the winery, the grapes are fermented in stainless steel tanks fitted with temperature control to maintain the fruity aromas. Once the desired color and wine structure is achieved, the wine is moved on to the malolactic fermentation. The young wine is clarified and bottled around January, whereas the wine for ageing (Crianza, Reserva and 8 de Caecus) is aged in oak barrels for 16 to 24 months, with decanting at least every six months, before bottling.
